This salad would no doubt be great in a pita too.
Greek Salad Chickpea Wraps

Greek Salad
- 1 15-ounce can of chickpeas
- 1 cup cucumber, chopped
- ¼ cup red onion, chopped
- ¼ cup kalamata olives, halved
- ½ cup Roma tomatoes, diced
- ½ cup fresh parsley or other herbs (from a paste is fine too)
Dressing
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Wraps
- Flour tortilla wraps
- About 1 cup of lettuce
Instructions
- Combine all the salad ingredients in a large bowl. Toss with the dressing.
- For best results refrigerate 30 minutes to let the flavors merge.
- Place lettuce on each wrap, then add several scoops of the Greek salad on top.
- Wrap up and serve!
