Greek Salad Chickpea Wraps

This salad would no doubt be great in a pita too.

Greek Salad Chickpea Wraps

Greek Salad
  1. 1 15-ounce can of chickpeas
  2. 1 cup cucumber, chopped
  3. ¼ cup red onion, chopped
  4. ¼ cup kalamata olives, halved
  5. ½ cup Roma tomatoes, diced
  6. ½ cup fresh parsley or other herbs (from a paste is fine too)
Dressing
  1. 2 tablespoons lemon juice
  2. 2 tablespoons olive oil
  3. Salt and pepper to taste
Wraps
  1. Flour tortilla wraps
  2. About 1 cup of lettuce
Instructions
  1. Combine all the salad ingredients in a large bowl. Toss with the dressing.
  2. For best results refrigerate 30 minutes to let the flavors merge.
  3. Place lettuce on each wrap, then add several scoops of the Greek salad on top.
  4. Wrap up and serve!
