Pita Bread Stuffed with Greek Salad

This Mediterranean salad is great stuffed in a pita. Make sure to toast the pita bread so it’s slightly crispy–it really adds a lot.

Ingredients
  1. 2 tablespoons olive oil
  2. 2 teaspoons red wine vinegar
  3. 1 teaspoon dried oregano
  4. Freshly ground black pepper, to taste
  5. 1 green bell pepper, chopped
  6. 1 cucumber, chopped
  7. 1/2 cup red onion, diced
  8. 1/4 cup feta cheese or vegan cheese
  9. Cherry tomatoes, as desired
  10. Pita bread, halved and toasted
Instructions
  1. In a large bowl or container, whisk together the olive oil, vinegar, oregano and black pepper. Stir in the green pepper, cucumber, onion, feta and tomato.
  2. Toast the pita bread and let cool. Stuff some of the salad in each half.
Notes
  1. If you want this to keep for several days in the fridge, keep the dressing and veggie/feta mixture separately, and mix together each time you serve.
