This Mediterranean salad is great stuffed in a pita. Make sure to toast the pita bread so it’s slightly crispy–it really adds a lot.
Pita Bread Stuffed with Greek Salad

Ingredients
- 2 tablespoons olive oil
- 2 teaspoons red wine vinegar
- 1 teaspoon dried oregano
- Freshly ground black pepper, to taste
- 1 green bell pepper, chopped
- 1 cucumber, chopped
- 1/2 cup red onion, diced
- 1/4 cup feta cheese or vegan cheese
- Cherry tomatoes, as desired
- Pita bread, halved and toasted
Instructions
- In a large bowl or container, whisk together the olive oil, vinegar, oregano and black pepper. Stir in the green pepper, cucumber, onion, feta and tomato.
- Toast the pita bread and let cool. Stuff some of the salad in each half.
Notes
- If you want this to keep for several days in the fridge, keep the dressing and veggie/feta mixture separately, and mix together each time you serve.
